SIDES



Crispy Shaved Brussels Sprouts
Shaved thin and crisped to perfection in avocado oil, Himalayan sea salt, garlic. Can be finished with parmesan or truffle oil.


Cauliflower Rice
Tumeric is the king of spices for health and anti inflammatory properties using in combination with veggie broth, coconut oil and herbs creates a wonderful yellow “rice” that is a delicious grain alternative.


Red Lentils
Influenced by my travels to India and the healings herbs of coriander, cumin, ginger, and tumeric along with Himalayna salt and ground pepper for absorption making this another great side dish and protein rich grain alternative.


Sautéed Chard with garlic and red onion
Swiss chard is Lucia's favorite green and needs nothing more than garlic, high quality olive oil, and salt & pepper. Powerhouse Kale sauté accompanied by shallots, mushrooms garlic and an aged basaltic.


Tarragon Greens Beans
These beans packs powerful dose of protein, fiber, and general well being! Often made straight from my garden with a variety of herbs and crispy leeks or shallots, cooked just enough to burst with flavor.


Beets on their greens
Beets are so good for us. They are the ultimate detoxifying veggie and help clean our our liver our blood and our kidneys! They have depp woodsy flavor that when cooked properly mellows and feels as nourishing as it is! Tossed with EVOO, garlic and sometimes a rich vinegar to finish.

THE STORY ON STARCHES
The grain families, all grasses like wheat, corn, and barley are truly indigestible by our human digestive tract. Yes, many can tolerate for years, even a lifetime but we know now that these irritants to our gut and ability to properly digest has lead to almost all forms of disease we face. So I do not eat them. I would recommend that you try to avoid them as well and when we focus only only the best most healing foods the others fall away easily. I would not live without huge flavor and food satisfaction!!
